GRAPE VARIETY
Merlot and Cabernet Sauvignon.

SOIL TYPES AND AVERAGE AGE OF THE VINES
Clay and limestone soils where berries are at their optimum ripeness.

HARVEST
We select the ripest grapes. A cold maceration is done for three days to extract fruity aromas.

VINIFICATION AND AGEING
After fermentation, a small portion of the wine is raised in vats for six months, with racking, respecting the tradition of Bordeaux appellation.

TASTING
Deep garnet colour with purple glints. Fruity and greedy nose of red fruits, with chocolate and vanilla notes. Velvet structure with cherry aromas and chocolate notes. Le Grand Chapelain red has a long finish.

AGEING POTENTIAL
To beenjoyedimmediately or to keep for 2 to 3 years.

SERVICE TEMPERATURE
Serve between 16°C and 18°C.

PAIRING
Best tasted with beef or a vegetable terrine.
