Tio Pepe
In 1835 in Jerez Spain, Manuel Maria Gonzalez, set up the first manifestation of the company that was ultimately to become Gonzalez Byass. Mentored by his uncle Jose Angel de la Pena (affectionately known as Pepe,) who in 1837 delicate sherry to his own, personal taste. A couple of barrels of this new wine was sent to London to Robert Byass (future company partner) who was sceptical but the beautifully dry taste of Jose Angel's wine proved a great success and in 1849 Manuel named what is now the best selling Fino after it's creator (tio being Spanish for uncle) - Tio Pepe
Uncompromisingly dry, always served cold from the fridge to be kept and served just like a white wine. A pale straw coloured wine which is very dry and light on the palate. Drunk by the locals in Jerez with tapas, as they've done for over a century.
