Like Champagne Cava comes in various degrees of sweetness. The warmer climate in Spain gives the drink a softer, fruitier taste. A Spanish, bottle - fermented sparkling wine, made using the same process as Champagne.

Prosecco, the exciting and traditional Italian sparkling wine is also the name of the grape used to produce it. Clean and crisp with lovely, grapey flavours, a hint of natural sweetness, fine bubbles and a lingering finish- Prosecco has it all which explains the massive boom that has been seen in this market.

Champagne?

Technical definition; Champagne is sparkling wine made in the Champagne region of France according to the Traditional Champagne Method.

Traditional Champagne Method

The best Champagnes and sparkling wines are made using the‘méthode champenoise’ which requires a secondary fermentation in the bottle. Accomplished by adding a mixture of sugar and yeast to still wine; the wine is then bottled and capped. The yeast then acts on the sugar and the resulting carbon dioxide remains trapped in the bottle…. Voilá! We have the bubbles!!

Types of Champagne

Blanc de Blancs; From the French term meaning “white of whites” Champagne made using only the juice from the Chardonnay grape.

Blanc de Noirs; From the French term meaning “white of blacks” Champagne made using only the juice from the Pinot Noir or Pinot Meunier grapes, or a blend of the two.

Rosé; Produced either by leaving the clear juice of red grapes (Pinot Noir and Pinot Meunier) to macerate on its skins or, more commonly, by adding a small amount of still Pinot Noir red wine to the sparkling wine cuvee.

Types of Sparkling Wine

Spumante – Italy, Cava – Spain, Sekt – Germany
Crémant; A very lightly sparkling, creamy, frothy wine (usually with a higher sugar content).
